4 cups of rice flour, 1 cup of flour, 2 cups of date jaggery or sugar, a pinch of salt, baking soda and a little oil for frying.
First, melt jaggery or sugar in a pot with enough water in the oven. While the mixture is hot, first add the rice powder, then mix all the other ingredients to make a thick batter. Resting the mixture for at least an hour will allow the pita to swell well while frying. After that, heat the oil very well in an iron or non-stick pan and drop the mixture into the oil with a big round spoon. The batter will puff up in a few seconds. When both sides are fried to a reddish brown, the delicious andas or oil pita is made for the environment.
