Sambha, a popular South Indian dish, was first created by accident by the Maratha ruler Sambhaji. One day, in the absence of his cook, Dal tried to make curry. During this time he mistakenly added tamarind with dal, the resulting dish later came to be known as ‘sambar’. Idli-sambar can find a place in the morning or afternoon snack. Everything you need to make sambar
1. Lentils or mung beans
2. Vegetables of your choice (you can take yams, pumpkins, carrots, stalks, radishes, tomatoes, potatoes, chichinga, spinach and gourds)
3. tamarind
4. Salt, turmeric, pepper, mustard seeds and fenugreek seeds in quantity
5. Jaggery quantity
6. curry leaves
8. Onion, garlic
7. Sambar masala

How to make Sambar
Soak tamarind in a bowl beforehand. Soak one spoon of tamarind in 1/3 cup of hot water for 20 to 30 minutes. If it is soft, the water should be taken out in the chip. Discard the seeds and peel. The dal should be soaked for a while and boiled. Then mash well with your hands. Chop the vegetables of your choice and add onion, turmeric, salt and chili powder. Add enough water. This time shake well and cover the pot. Let the vegetables cook on medium heat. Do not overcook the vegetables. When it is boiled, tamarind water should be mixed in it. Add a spoonful of jaggery and sambar masala to enhance the taste. Now pour the boiled dal. Mix well. Pour some more water and let it boil for some time. But the sambar should not be too thin. Heat a little oil in a pot and add garlic and whole mustard. Add dry chillies, curry leaves and fenugreek seeds and when it turns red, pour it into the sambar and close the lid. Serve hot.

Everything you need to make idli (for four people)
1. Sugar powder rice 200 grams
2. Maskalai Dal 100 grams
3. Like the amount of butter or ghee
4. Salt in moderation
5. Idli stand

How to make idli
First wash the rice and dal very well. Then soak for three to four hours. Make a paste of soaked rice and pulses with water using a mixer machine. Keep in mind that the batter should not be too thick or too thin. Allow the batter to ferment. When the batter swells, add salt and mix well. Boil idli steamer with enough water. Now grease the idli stand with ghee or butter and fill the idli mold. Place the idli stand inside and close the lid. Now leave it for 8 to 10 minutes and take it down. Then take out the idlis using a sharp knife. Serve hot with sambar.
